After getting my motor back from having the bottom, and top end rebuilt, when I go to try and start it when its cold, the motor revs super high until I take the choke off and then it wants to die. If I try and blip the throttle to keep it running it will bog out and foul the plug. Its also MUCH harder to start then it once was before the rebuild. What could be the problem? Am I leaking fuel into the intake manifold from the carb maybe?

I sounds like you have an air leak. My bike had a similar problem and it was the left side crank seal under the stator. very easy to replace.

Check your reed block junction, freshen up your gaskets all round. Check your idle circuit, check your throttle cable, check that your throttle slide is installed correctly,,,
