2.5 seems to be the go for rear shockers. I've seen a few people use 5, though. Depends on what you're after, and how you ride. I can't help much with the brands sorry. If you do a search, you'll be able to find all the information you're after.
Seems like an excellent question for Jeff Fredette at Fredette Racing Products.
He'll know the right oil for sure, and will sell it, too. FWIW, he was the top placing American at the '84 ISDE on a KDX200, and he knows all there is to know about the early 200 models.
