2000 KTM 250 EXC. Changed oil before ride, came out looking new as always. Rode approximately 2 hours. Drained oil, looks like a chocolate milk shake. Bike does not exhibit excessive smoke, do not see any cross-contamination of coolant in the radiator. Did not ride through water, no oil leaking around the motor. What could it be?

Sound like a water pump seal failure. Water is leaking past the seal and into the transmission. Often, there are no external leaks. Is the coolant level in the radiator low? It doesn't take too much water to contaminate the oil. That would be my first thing to check.
