I've been asked to organize a poker run as part of a dirt biking weekend for familes. Having never ridden a poker run I'm looking for some advice. (I got the assignment becuase I can't BBQ.)

So what is the hot tip in putting together a easy/fun ride for a bunch of father and son/daughter pairs?

Make it a six card hand with best five cards counting. Each lap they get one card each and best 5 card poker hand wins.
Unless you run a kids course and an adult course there is no way to keep the levels apart so make sure everyone knows that they should not run over slower riders
Maybe give an extra card (not announced in advance) to anyone stopping to help a slower/stuck/lost rider.
Poker runs are fun because even the slowest riders have an equal chance of winning. make it clear there is no benefit to running all out and running each other over as you will only get 3 cards each no matter when you finish your lap.
