What diameter safety wire should I use for my grips?

Moose sells 2 gauges: .028 and .032

I don't know what gauge I have, but I've snapped quite a few wires twisting them down onto the grips (using safety wire pliers). I would go with the thicker .032.

Use .032. In the aviation world when safety wiring the rule is 6 to 8 twist per inch any more work hardens the wire and will break easy.
