Torquing studs?

What is the best way to torque studs? Im about to have my cylinder replated and had to remove all the head studs. Could i just put the 2 nuts on it and get one w/ the torque wrench and hold the other so they dont spin?

Rich, do you guys treat the studs with locktite, grease or anything like that before putting them in ?

I hate how corroded they get between top end jobs. Is there a good way to prevent this?
