A repair manual will help. They're probably 20$ and will have everything you'll ever need to know about your bike in there. Most will have stock jetting included in the preface of the jetting/cab chapter. It will take some reading but once you figure it out, it's cake. Stock is definitely the best starting point, then take into account your mods, and running condition (plug chops), and adjust your jets till you get a smooth running machine.
