My dad has a 1983 XT550 that when you ride for about half an hour to an hour it'll die and then you can't get it started till it cools off.

Have you checked the valve clearances?

If the valves are too tight, when the motor gets hot they will not close all the way. This can cause it to die, and to be impossible to start when hot.

I have a freind who has an 82 XT 550 with the same problem you are describing. We cleaned the carb, adjusted the valves according to the book, and every other thing you could think of and it did the same thing. Turned out it was the cdi. That year had 3 different colors of labels on the cdi, green, brown, and black. Id almost bet yours has brown or green. My friend got a new box with the black label, and after 3000 miles has had no trouble at all. If you cant find a new box locally, try Destination Powersports in Marionville Missouri. Phone is 417 258 2544. Ask for Brian in parts, hes been finding stuff for my vintage mx bikes and really knows his stuff. Hope this helps
