I own a 84 CR500 and in process of replacing the rear hub bearings.When I took it apart both bearings are sealed on both sides.I guy at work says that the bearings should be open to the centre of the hub and that the hub should be packed with grease. I have 2 new bearing for it and wondering what way to install? Thanks

Leave the seals in, its designed that way on purpose by being sealed the bearings should last a good while. If you wanted to you could pry up one of the seals and you can get the bearing to last quite a long while but its going to require constant cleaning/repacking of the bearing and in the end it won't really last that much longer and its just a big pain.

Depends. If your running submerged in water half the time like I do in western Washington. I ride a lot in the rain. I prefer to remove the inner seals and pack the hub full of low temperature grease. That way as the grease is lost from the bearing it gets replaced with grease from the hub instead of dirty water from the outside.

Yea then it attracts even more dirt in the end and destorys the bearing even faster due to premature wear. This is such a thing as too much grease and packing the hub with grease is bad. I wore out the rear wheel bearings in my '86 CR cause I thought it be kewl to grease the axle you know more grease should last longer right.. wrong the bearings worn out in 6 months cause the extra grease attracted more dirt in the end. The front bearings on my yz arn't sealed on both sides which surprized me. Once they wear out I'm going to replace the bearing with high quality after market bearings from a good bearing shop. The last time the bearings came with larger races so the bearing would wear longer and was $5.25 a bearing vs $8.65 for cheaper bearings from the dealer.
