The holeshot devices on the forks have been proven to work by transfering the weight to the front end. Now my question is, would there be any benefit to useing the same type of device on the rear to maybe lower the center of gravity and help the bike hook up even better?

I think if you did that, you would counteract what you are doing with the forks.

you could but then you have to lower the front end just that much more

Not true. Lowering the rear will bring the swingarm closer to parallel, extending the wheelbase, and giving the bike more leverage over the forces that cause wheelies.

That's why all the streetbike drag racers slam their bikes.

Though sometimes, it might be favorable to have more weight on the front than a longer wheelbase. You must experiment. You could use a tie down in the back and see how the bike launches. Remember, wheelying only happens with traction!

THat's how the street riders lower the fronts! The tie downs have eyelets and you just unbolt one caliper bolt on each caliper, and bolt the tie down in.
