Matching Cases......stuff or grind???

I am looking at matching my cases on my '03 125 SX. I was wondering what the main advantages are of stuffing the cases over just grinding on the cylinder?

I realize I will gain some topend by grinding the cylinder, but will it be at the expense of loosing low end?
