The oil injection pump is usually driven off of a small gear that is connected to the ??, not sure on the bike. You'll have to take it apart and look. You should take out the injection pump and the gear drive and then have a block off plate fabricated to seal off where the injection pump was. make sure you block off the ports where the oil is injected into the motor as well.
As far as jetting, you'll have to figure it out yourself, it's different for every bike/condition/terrain/etc. Do a search on jetting, it'll take you a few days to read the results.
