I know some where this has been coverd but after several searches can not find. how do you learn your timeing on jumps? As in how hard to hit for correct distance? And how would you teach a 11yo?

Just stand up in a neutral position (by neutral I mean make sure you are not leaned on the back or on the front, just directly up from your pegs) and start out small. You will start getting the feel of where you should be on your bike when you take off (which is the most important part) and then you can work your way up to more challenging jumps. If you are going to a mx track try to stick to step-ups and tabletops because they are the most forgiving jumps when you end up short.
