The hydraulic repair shop I work at (new life after truck driving :D ) has a lapping table. What are the pro's/con's opposed to milling or lathe for a cyl.head(2 smoker) and other parts?would the head be to lite and bounce around on the table, or would it have to be weighted or not use the table at all?

A surface plate or lapping table will work well to get a flat true surface on the cylinder head or the cases, but it's pretty difficult to remove enough material that way to change the squish clearance.
If and when I have a very stubborn gasket to remove , I follow up most of the grunt removal with the "plate of glass and a sheet of emery cloth" trick when feasible. I am sure that lapping table would be awfully nice for that.
