I guess it also is important to ask what type of riding do you want to watch? Freestyle? MX? Offroad? A mix of everything?
For off road you can't beat "Time to Ride". Hawkins, Abbott, Watts, Davis and a bunch of other off roaders dicing it up. I also really liked the 2000 Enduro Series Highlights from Digital Video Factory.
I picked up "Project MX - Terra Firma 7" and while it is really a high quality vid, it is too short. Not as much fun to watch as some of the others. Some of the special features were good though.
Just to join in the echoes, Time to Ride and Revelation 199 are my favorites. I like the Crusty movies too, but can't seem to tell them apart. Children of the Metal God has some funny moments. Organ Donors isn't bad either as I recall. Heard bad things about Steel Roots 2, haven't seen it myself yet though.
Definitely R199 and the original Steel Roots. Terra Firma 7 is pretty good and Steel Roots 2 was just ok. Steel Roots 3 is premiering after the Anaheim SX this weekend at the stadium.

MY personal favorite. Would have to be the video we took of me and a buddy. I was trying to teach him how to ride wheelies on a sportbike. He got the throttle and brake thing down, pretty fast. But he just couldn't control the direction (side to side):p . Ended up going into the ditch and hitting the camera man (me).:eek: Guess I should have tought him better.
Oh wait you'r talking about real videos? Toss up between 199 or On Any Sunday.
