I use a Canon 40D with a 70-200 f2.8L lens and a 580EXII flash. Settings vary, but most were shot at ISO 200 and f4. Pics in the woods were shot in manual mode at 1/1000, most of the ones in the open were aperture priority. I always shoot RAW.
Your D60 should be very capable, but kit lenses and "consumer zooms" will definitely hold it back from it's true potential. That being said, practice and learning your camera will help the most. I'm still learning and still consider myself a newbie, especially compared to some of the other great photographers on this board.
