do tubes fit a range of tires, and if so will a 120/100-18 tube fit a 110/100-18 tire?

Yes there is a range that one tube will fit. Yours will be fine.

MSR (im sure there are other brands also) makes a heavy duty tube that is like 3 times as thick as a regular one.

I have the MSR Ultra heavy duty tubes and they are great. I ride the power lines in Monroe, NH sometimes and there are a lot of very sharp square edged rocks and ledges. I have really slammed these hard at times and the tubes have not failed. Yet.
