This bike is my first 4 stroke so this is probably a dumb question. Let's say I am riding and have to pull in the clutch and brake hard. More often than not my bike will stall. I am about certain my idle speed is a little low. It will idle's strong on a cold start with the choke but then has a tough time idling after that (choke off).

Is this as simple as adjusting the idle adjustment wheel and the mixture screw per the manual?

If you are riding in the woods and trails you may need to turn up your idle, it really helped me and I went from a 250exc to a 450 exc

Not sure of your location, but in our shop the 250f's are very lean out of the box in the pilot jet. Without going to a larger pilot they won't idle worth crap.
