Where should we start with when dirt bike Hrlydro locked after adding coolant? Drained it and unseized. Do I replace bottom and top gaskets or something else?

Um, hydro-locked deals with hydrolic systems. Example, break system, master, slave, cylinder, calipers and lines. You seem to have a blown head gasket. Might indicate a warped cylinder head, have it checked for warpage, as well as the cylinder mating surfaces. After you succeed in that dept. move on to new gaskets and perhaps a top end? good luck..
