jetting for multiple carb bikes

Ok, so I think I got the single cylinder/carb down good enough, but what about multiple carb bikes(street bikes)? Main jets I can do a plug chop for(just a little harder/scary going 150mph) but I can allways do it on the dyno at school... But what about the other circuits? (pilot, needle etc...) how do you get those down, supposing you don't have access to a dyno.
