OK, here is something off the wall for you off road folks.

I have been trying to get my wife into the off road scene for years, and she is just too scared. I had her try a little ATV last week, and she did not like the thumb throttle, she felt out of control, and gave it up. Bear with me, my wife has never ridden a bicycle and only started driving a car in her 30's.

As a last resort, I am considering getting her a Kawasaki mule, put on some bigfoot tires, strip off all the hockey stuff, and turn it into a mini-jeep (she can carry the beers too!) - My only concern would be its off road capabilities. I know a lot of hunters use them off road, and she will not be climbing any hills or rocks. So, would you guys think this may be a better bet than a quad, or does the Mule have some serious limitations ?

This place has some cool ORV's (not quads!) http://www.deeredoctor.com/

Don't forget about the Polaris Ranger, John Deere, Cub cadet, Toro, Kubota, and others.

But the Mule has been around longer than most, so you might find a few used.

My 2 cents... Whatever she gets, it has to make her not freak out, it needs to make her feel confident.... Anything you get could put her in serious danger if she freaks out about the controls.. etc...
What about some retro action like an old honda FL350, or FL400 ? AKA Oddessy and pilot... those things were HOT!!!

My G/F had never been on a bike or quad before in her life. I bought her a 2004 250ex quad and she loves it. No clutch, great on trails, and just enough power for a girl. I took her to an open field and let her practice riding untill she got the hang of it. You can't go wrong with this quad.

A older pilot if you could find one would be super cool.

Or one of these? http://www.git.com.au/~theedge/index.htm

They are homebuilt buggie kits. You can use just about any motor that you want and it would be a blast to build as long as you can weld. That way you could start here off with smaller motor and as she gets better or wants more power you could swap it out easy.
